I Found It!

Pumpkin Scones

2 cups flour
1/2 cup brown sugar
1/4 tsp ground ginger
1/2 tsp nutmeg
1/4 tsp allspice
1/2 tsp ground cinnamon
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 cup cold unsalted butter
1/3 cup buttermilk
1/2 cup pumpkin (if canned, be sure there are no spices or sugar added)
1 tsp vanilla extract

Mix together flour, sugar, spices, baking powder, baking soda and salt in a large bowl. Cut butter into small pieces and cut into flour. Mixture should look like coarse crumbs. In a separate bowl mix together the pumpkin, buttermilk and vanilla. Add to flour mixture and mix until the dough comes together (don't overmix).

Transfer to a lightly floured surface and knead gently 3-4 times, and then shape/pat dough into a circle about 1 1/2 inches thick. Slice in half, and then cut each half into 3 equal pie-shaped wedges. Brush with egg glaze (1 egg beaten with 1 tbsp milk), and sprinkle with Turbinado sugar.

Bake on a cookie sheet for @ 375° for 20 minutes, or until a toothpick comes out clean. Makes 6 scones.

**I added about 1/4 cup of Maple syrup for extra flavor and about a 1/2 more flour to stiffen the dough up a bit!

Pumpkin Scones

I made pumpkin scone on Saturday which turned out delicious! Moist, nicely good! The only problem is now I can't find the recipe. Sigh...

Recipe oh recipe...where art thou? Thou art needed again!

I remember it was on someone's blog page, I believe. I could probably remember most of what went into it but I'd rather find the recipe just in case.

If I rediscover the wonderful recipe, I'll be sure to post it!

The Great Introduction...or something like that

I've been holding off on typing something in attempts to think of something good and meaningful. Something that will reflect me to you. Something that is interesting enough about me that random people might think "hey, she sounds interesting...let's keep reading..." I give up!

So let me introduce key element of myself:

I am a coffee drinker! I love my coffee and you bound to hear that a time or two.
I love to is a stress reliever for me and just plain fun.
I'm a food broker-customer service person (aka no one knows what I do)
I collect Starbucks mugs which means I'll never run out of mugs. I have over 30 from all over the world.
I obviously enjoy traveling. I've been to 13 countries, I think, which isn't a lot in the scheme of things.
I'm a student...working on my Master's degree (aka still a poor college student).
Lastly, and most importantly, I'm a person called by God to serve Him throughout my life!

So anyways, here's my first blog. I don't know how consistent I'll be but I'll try my best.
